You can use either but I would prefer something with a blend of wool and acrylic . After all the work you put into it, you want it to drape well and hold it's shape over time.

Use a merino wool or wool blend. Merino is very soft and does not itch.
I just did a sweater out of Debbie Bliss Rialto and it turned out lovely. It's superwash too.
Trust me - you won't enjoy wearing an acrylic garment. They don't regulate temperature very well. They are too hot and sweaty indoors because they don't breathe, but they are not warm outside either. Many acrylic yarns don't hold their shape well (no elasticity) and they can shed/pill like crazy.

Acrylics are inexpensive and come in a wide variety of colors, but they don't breathe well, so the fabric is less comfortable to wear.
Wools are more pleasant to wear (unless you are allergic) and easier on the hands while knitting, but they require special care of the finished garment. Only the ones marked Superwash can be washed in the washing machine.
Both will block well.
